“The best way to know a territory is eating its food, or rather, eating the territory itself..”
( by Italo Calvino, “Sotto il sole giaguaro”).
We are convinced that it is possible to understand a territory by eating its food. In order to do this, we hope to have the possibility to make you want to taste these products by telling you their story and the recipes through which they are enhanced.
The products boasted by the Pistoia Apennines are various. We may want to remember the savory Sorana bean, the traditional pecorino cheese made with unpasteurized milk, the blueberry and the chestnut flour.
